The olive oil of the variety 'Galega' is characterized by its mild character and a light, fruity-spicy sharpness.
It was classified as flawless by a member of the German Olive Oil Panel. It was emphasized that in this oil the balance between fruity note and sharpness, as well as between freshness and tartness, is exceptional and very rare for a single-variety olive oil.
It has an acid content far below 0.8% of the conventional standard product. Since the olive harvest delivers a slightly different quality every year, we state <0.5% acidity on our label, but are still below 0.2-0.3%.

The olive cultivation in the Alentejo Litoral (south-west coast of Portugal) is still traditionally characterized. The cultivation takes place largely in combination with sheep grazing, no large plantations, but all the more manual use. The 'Galega' variety is mainly grown, as this variety produces a first-class, versatile olive oil without the need for a blend (cuvee), as is the case with other, higher-yielding varieties.
